Sunny Day Sandwich

During the winter months, I tend to turn into a bear.  No, I don't really get grouchy -- it's more like I crave comfort foods (high in fat and salt, generally speaking) and then want to hibernate.  Pair that with the holidays, and it's easy to see why we gain weight in the winter.


Well, the next time you are feeling a little stir-crazy from the winter, and want a nice taste of summer, why not try this sandwich (smorgas) that I feel is a bit of a summer breeze for your taste buds?


Take a slice of multi-grain bread (I like the kind with sunflower seeds in it) and spread VERY LIGHTLY with mayo.  Add a slice of your favorite cheese -- I prefer Monterey Jack, but Muenster or Swiss would do nicely.  Add some sliced avocado, paper-thin slices of cucumber and tomato, and some sprouts.  Top it off with some spicy brown mustard and the other slice of bread.  


It's going to be a thick sandwich, and will actually stay together if you "smoosh" it a little at this point -- so that the avocado squishes in between all the other veggies.


Enjoy this with a glass of lemonade, while sitting in a patch of sunshine...  And you can almost taste summer on it's way again!
