Superior Remoulade Sauce

1 cup mayonnaise
1/4 cup sour cream
2 T tomato paste
2T spicy brown mustard
1T fresh lemon juice
1 T your favorite hot sauce
1 T capers, chopped
1 T fresh parsley, finely chopped
1 tsp worcestershire sauce
4 shallots, finely chopped
1 clove garlic, minced
1/2 tsp each salt and white pepper,
1/4 tsp cayenne pepper.

Mix all ingredients.  Cover and refrigerate.  Great with seafood, fired catfish.

  1. Oh, ALSO is excellent with fried green tomatoes. A good way for our gardeners to use up those last, unripened tomatoes before a hard freeze!
