Potato Leeky Quichey

pie crust (going to assume you've got this covered hehehe)
4 potatoes, peeled and sliced thin
1 cup cleaned and chopped leeks
1 T butter
6 eggs, or 3 eggs and 4 egg whites (healthier)
1/2 cup milk
pinch or two of ground white pepper

Sautee your leeks in the butter. Layer your potatoes in the pie crust, with your sauteed leeks. Beat together your eggs, milk, and white pepper, and pour into your potato-leek filled crust. Bake at 350 degrees for approximately 40 minutes. YUMMMMMY!
