New Mediterranean Lamb

6 cloves garlic, coarsely chopped
2T olive oil
zest of one lemon
1/4 cup finely chopped fresh oregano
2-3 pound bone-in or boneless leg of lamb

Combine the first four ingredients. Place your lamb, fattiest side up, in a roasting pan, and score the top of the roast. Rub with mixture of garlic et al. Bake in a 325-degree oven for 20 minutes per pound, for medium rare. Let sit 10 minutes before carving.
