Indian BBQ Cauliflower (vegan)

1 large head of cauliflower, cleaned and chopped
3 T veggie oil
small can of tomato paste
4 T apple cider vinegar
1 tsp ginger root powder
2 ounces tamari
2 cloves garlic, minced
1T curry powder
1 tsp chili powder
1 tsp garam masala
1 tsp cumin
1 T sugar

Pre-roast the cauliflower in a 400 degree oven, brushed with a little veggie oil, for about 30 minutes.

While this cooks, saute your garlic in the remaining oil. Add all other ingredients, and simmer for 5 to 10 minutes.

When your cauliflower is done, toss with your sauce to coat, and serve!
